Lentils-Alaria Soup

Wash one cup of lentils. Place in your bean pot in this order: lentils, alaria, one diced carrot, two stalks of diced celery, and one diced onion. Add water to cover, bring to a boil, then simmer 45 minutes or until the lentils are tender. Alaria or kombu added to beans will reduce gas. Cumin will, too. For fun, add some cumin and serve burrito-style with corn tortillas.

Alaria is delicious added to rice, barley, or millet. Cooked with beans, alaria will impart a rich "gravy" texture.

Dulse

A wonderful chowder can be made by combining potatoes, corn, sautéed onions, celery, and dulse. Fish may be added, of course.

You can sauté dulse, like kelp, using safflower or sesame oil, to get a crunchy chip. Dulse can be roasted in an oven at 200 degrees until crunchy, then eaten as is, or ground to flakes. Flakes are a good condiment for salads, soups, fish, potatoes, eggs.

Dulse may be added to any bread or pastry that has a high content of corn or oats. Add sunflower seeds, nuts, raisins, or currants. Very hearty, very sustaining. Another bread combination is wheat/rye flour, onions, dulse.

Dulse and kale: Mince two cloves garlic and sauté briefly in two tablespoons oil. Add two quarts chopped kale and sauté until the color deepens. Add 1/2 cup soaked drained, chopped dulse and 1/3 cup roasted sunflower seeds. Cover and steam about two minutes.

Fried Rice with Nori

Oven roast 1 cup nori at 200 degrees until very crunchy and crumble it up. Heat 2 tablespoons sesame oil in a skillet and sauté one cup scallions or onions for 2-3 minutes. Add nori and one cup matchstick carrots. Sauté 5 minutes.

Add two cups cooked rice, one tablespoon minced ginger. Cook on a low heat until warm throughout. Season with tamari and add 1/2 cup roasted, sliced hazelnuts.

Irish Moss

Irish moss can be boiled and strained, saving the liquid. When the liquid cools, it creates a gel, carrageenan. The gel can serve as basis for desserts that are variously flavored with such things as honey, milk & nutmeg - or mint, apple juice, strawberries & walnuts.

Irish moss may also be added to vegetable soups and stews, to thicken the dish. Remove the plant before serving. The gel is soothing to the digestive tract. Carrageenan is used as emulsifier in ice cream and condensed milk.

Dulse Soup (Old Scottish Recipe)

1 cup cooked Dulse
1 tablespoon melted butter
6 cups of milk 2 cups mashed potatoes
juice of 1 lemon
pepper to taste

Simmer the milk, cooked Dulse and mashed potatoes together for about 20 minutes, then either beat well or liquidize in a blender. Season to taste, add the melted butter and the lemon juice and beat again. Heat up and serve immediately. Serves 6.
